I figured it was time for an update, but now I sit here with not much to say. I've started and stopped a gazillion posts, but nothing has ever really struck me as "post-worthy".
Vegetarianism is going very well, it's becoming easier and easier to make balanced, meatless choices as I slowly venture into the world of soy and tofu. (FYI: If you're in Toronto, Freshwest Grill offers a WONDERFUL Southwestern Salad with Soy. OMG. HEAVENLY.)
Other things have been happening, some good, some not so good, but suffice to say life is going well RIGHT NOW, so I can't ask for more, really ;)
Anyhow, I'll try to post more on everything soon when my mind is a little less foggy :) TTYL!

All hail the bean!
So week one of lent has passed and guess what? This vegetarian thing isn't half bad! Once I mourned the loss of Manchu's nummy fried chicken, and remembered NOT to taste test J's meat (oh habit, how you suck so bad) to see if it was cooked to sire's specifications, eating hasn't been too hard!
Granted, I'm not fully veg since I still eat fish and eggs. I'm thankful for allowing myself these two leanbacks as I'm not well versed in how to eat properly without including meat, nutritional substitutions etc. The first few days were iffy, and I found myself feeling faint many times (impaired glucose tolerance is a tricky thing to manage on the best of days). But I'm getting there, and I'm slowly finding replacements.
So what I learned this week: Beans ROCK.
I always enjoyed brown beans on toast (my British side coming through), but I can now safely say I heart chickpeas, kidney beans, pinto beans and black beans as well! Below I've added two recipes I got from my friend, Erin. They're wicked good, and I'll be making them both again.
As for the "giving up" side of things, I'm really not feeling I'm doing without a whole lot. While it has been a little bit of a challenge to balance my diet, I don't find myself CRAVING meat or being sad because I can't have it. Maybe this will stick afterall... Who knows?And maybe I should give up chocolate next year... Or the internet... Okay I kinda scared myself with that, I don't think I could live without the internet ;)
S isn't as put out as he thought he'd be either. I still make chicken and beef for him and J, and he knows I'm not trying to convert him, so he's let down his guard a little - I even caught him eating a few meat-free meals all by himself *gasp*!

3 BEAN VEGETARIAN CHILI
*K's notes: This stuff is amazing, but can be a little spicy for those with a sensitive palette. Just add a little less spice than is suggested if you think you might have trouble, and you should be fine. I forgot to get corn (duh) so I used an extra sweet potato as a replacement, and it turned out great! It added an extra sweetness to the chili that I found very nice! One batch was enough for a bunch of lunches which I separated and froze. I'll let you know how they re-heat (although I recall Erin saying that they re-heat just fine). I also used olive oil instead of safflower oil since I had olive oil on hand.*
1 onion, diced
1 tbsp safflower oil
1 can diced tomatoes
1 can tomato paste
1 can tomato soup
1 can red kidney beans, drained and rinsed
1 can pinto beans, drained and rinsed
1 can black beans, drained and rinsed
1 tsp paprika
2 ? tsp ground cumin
1 ? tsp cayenne pepper
1 ? tsp oregano
2 ? tsp garlic powder
1 tbsp red pepper flakes
1 medium yam, peeled and cubed
2 cups frozen corn niblets
~ Over medium heat, sauté onions in oil until clear and set aside
~ In a 6 quart crock-pot combine tomatoes, tomato paste, tomato soup, and all spices. Stir to combine
~ Add in onions, beans, yam and corn
~ Cook for 3- 4 hrs or until bubbling.

CHICKPEA SQUASH AND POTATO PATTIES
*K's notes: These are wicked-good. The recipe made 6 nice sized patties, none of which I froze because I ate them too fast! I de-veganed mine, though, by adding a fistful of cheese to the mix and I found it added a pinch of tasty gooeyness (yes, a technical term). I did find that the prep took a long time. Even though it was worth it in the end, I think I'll opt to use my food processor for shredding and mashing as opposed to doing it all manually next time. I didn't get the chick peas mashed enough, and the yam and squash shreds could have been smaller. (Next time will likely be tonight: I really enjoyed these!)*
. 1 1/2 cups mashed chickpeas (16 oz can)
. 1 cup of squash grated (I used acorn but you can use any variety: banana, butternut, pumpkin spaghetti)
. 1 cup potato grated yam (or sweet potato)
. 2 tbsp fresh diced green onion
. 2 tbsp fresh diced parsley
. 1/2 tbsp dried dill
. 1/2 tsp cumin
. ? tsp red pepper flakes (more if you like it hot or less if you don't)
. 1/2 tsp salt
. 2 tbsp whole wheat flour
. Safflower oil for frying
~ Mix all ingredients together in large bowl.
~ Add flour and use clean hands to work mixture together. Don't over work it or it will not keep together.
~ Form patties in a size of your liking and fry in medium heat pan until browned on each side.

Droolworthy
My freshly (albeit temporarily) vegetarian self cannot WAIT to try this. Soon.
"Butter" Chickpeas
4 potatoes - cubed
1 onion - diced
1 tsp garlic
2 tsp curry powder
2 tsp garam masala
1 tsp ground ginger
1 tsp cumin
1 tsp salt
1 can tomato soup
1/2 cup milk/cream
1 can chickpeas
Add some oil to pan, add potatoes and cook about 4-5 minutes. Add onion and cook until onion is soft. Add spices and cook for 1-2 more minutes. Mix in tomato soup, milk and chickpeas. Heat through.

I'm at the start, the BEGINning (ha ha ha *snort* - sorry, a little joke), the cusp of change.
I've done a lot of things in my life out of routine, just sat back and let autopilot take charge. Recently, however, I've been asked "Why?" a bazillion times. That's honestly J's favorite word now.
"Why you work, Mommy?"
"Why Meeko [our cat] no eat cheerios, Mommy?"
"Why no eat chocolate before breakfast, Mommy?"
Some of them are easy questions to answer,
"I work to make money. I make money to buy food and clothes and pay for our home."
"Meeko doesn't like cheerios."
"You can't have chocolate before breakfast because you'll spoil your meal. Breakfast first and then chocolate." (unless Mommy is PMSing and then it's an all day chocolate fest. But only for Mommy. Not you. Forget I said anything. These aren't the droids you're looking for. Nevermind.)
But some of them have been harder, like why Mommy doesn't have the same *ahem* equipment as J does (that's just something I'm not ready to get into QUITE yet), or why Mommy goes to church.
All this answering "Why" has prompted me to think about that, myself.
I've started to look at why I do the things I do. Why I believe the things I believe, and how the 2 affect each other.
My questioning has come up at an interesting time on my religion's calendar, as well. We've just started Lent.
For 40 days, in addition to giving something up (meat), I'm also going to try to be a better person and question what that means. I'm going to try and live a little simpler (passing on seconds, try to buy less stuff, get rid of the stuff I don't need) try to be a little nicer (give to charity more, not let my temper get the better of me, spend more time with family and less time online), and look at my core beliefs (this kinda goes along with "being nicer" and "living simply": Do the things I do and the things I support reflect what I believe? Are my actions conducive to what I want to be?)
So yeah. Deep stuff. But as I said, I'm just starting out... This is bound to be a long journey (probably longer than the 40 days of lent!)
Then again, I might reach Easter, have a burger, kick my neighbour and go buy a Ferrari!
Who knows, I'm just crazy like that ;)

Okay, so let's start over again.
So far 2010 has been one big, vomitous, poopstravaganza of a year.
J has been deathly ill since boxing day. 1st a cold, then strep throat, then... Get this.... EFFING NORWALK . Yeah, sounds fricken peachy, eh? No. It wasn't. Seriously un-peachy. In the past, I've gone on and on about how un-fun a sick child is. Well, take everything I wrote, multiply it by 10 and then you'll get the gist of how January has gone. Oh, and add the fact that now J can actually beg me to "Make it better? Please, mommy! Make it better!?!?", and you add heartbreak to exhaustion & panic.
But I've beaten that dead horse long enough. Now we're all relatively healthy again, so I'm ready to give this year a second chance. Start over. Carte blanche.
So... WHOOPIE! HAPPY NEW YEAR! YAAAAAAAAAAAAY! :)
And now for my New Years Resolutions... Let me show you them!:
1. Stick to a workout routine that pushes me physically outside of my comfort zone.
2. Focus more on making wholesome food choices/plans for myself and my family
3. Experiment with new recipes and foods
4. Make a lunch for work as many times a week as I can
5. Plan and take a weekend getaway with S
6. Keep the house at a “company’s coming” level of cleanliness
7. Invite more people to come and visit
8. Go to church more and practice my faith on a regular basis
Most of these (especially #6..... HA HA HA HA HA #6, I laugh in your face!) I haven't been able to truly focus on because OMFG BODILY FLUIDS EVERYWHERE SOMEBODY GRAB MANY TOWELS AND THE AIR FRESHENER!!!!!!!!!!!! But I have been able to get to a couple...
So, it's not a HORRIBLE start, but it's just a start and I have to get my butt in gear with the rest of 'em. ESPECIALLY #1. There's a reason for that. I have to get cracking with my workout routine not only because I feel better about myself when I exercise... But also because I will be undertaking this bad-boy in September!:
Cancer is something I wish I had no experience with. I wish I never knew anyone who had it. I wish it was one of those things I could look at from a distance. Truth is, it's hit closer to home than I ever wanted it to. My mother overcame uterine cancer a few years ago. We're very lucky that it was caught early on and that she got the help and treatment she needed. The help she recieved was primarily from the Princess Margaret hospital and the oncology staff there were (and still are) top notch. So you can kind of see why I felt the need, this year, to participate in this particular walk.
I'll be walking for 1 day instead of 2, but it's still a hike - 32km!!!!!! So i'll need to seriously ramp up my endurance :) I'm looking forward to it!!!!!
So yeah. That's my world in a nutshell, right now.
And since I'm at a loss on how to end this post... I'll leave you with a quote :)

- I've tried to work on #2 and have begun to ditch pre-packaged "quick foods". No more pre-shredded cheese (do you know what's in that shit? I'll give you a hint... IT'S NOT ALL CHEESE!) Also, I've taken to making my own chicken nuggets. They're more like miniature chicken fingers, but I can whip them up and cook 'em faster than the pre-packaged variety AND I know all of the ingredients in them! (Oh and, most importantly, J actually LIKES them!!!!!!!)

Goal Update!
Well, I'm thismuch closer to My Goal! I can actually get the dress on and done up!
The number on the scale isn't really changing, but the shape of my body definitely has. I've lost inches and have toned muscles. I also have WAY better endurance during the cardio portions of my workout, and have had fewer asthma attacks as well.
Hopefully I can stick with the program and complete the 30 days :) It's definitely proven its worth!!!!

Never thought it was possible... AKA: "Them"
I just finished Day #6 of the 30 day shred!!!!!!!!
I went from smelling okay to barnyard animal in 20 minutes. ICK! Shower time!!!
Oh, and I've been pretty sick the past couple of days (I even had to skip a day... Asthma acting up, viciously sore throat, etc. etc...), but I totally feel better after I work out. I didn't think it was possible. Then again, the most exercise I got before shredding was walking up my stairs.
I totally see what "people who exercise" do it for. I'm becoming one of them.
Those who are dying to say "told you so", can go ahead. I totally get it. TOTALLY.

Jillian Michaels is a (very encouraging and energetic) bitch.
... And love her for it. Now I couldn't necessarily muster up the strength to (virtually) hug her after the workout this morning (or wash my hair, or run for the train), but I appreciated the time I spent listening to her bark "If you're not feeling it, you're not working hard enough".
FYI, the 30 Day Shred is WAY harder on you than it looks (when you pre-watch it from the couch.) Yes you CAN do that, no it's NOT hard, but it's going to hurt more than your (my) ice-cream eating, couch sitting ass can possibly fathom.
Bottom line: It hurt. I whined. I'll do it all again tomorrow. :)

Goal!
So yeah, an update! Donating blood = not as bad as expected. While I tottered like a baby deer from the chair to the cookies, it only took a few minutes of rest to get my energy back up. I'll definitely do it again, especially since I now have a person I actually made who may need that blood someday.
So let's see, what else... OH yeah, the title of my post... I've modified my Christmas objective a wee bit. Here it is:

I started thinking about my objective. I could easily lose 15 pounds by Christmas on a crash diet. I could cut out breakfasts for a month, or just drink diet pop for a week or something like that, but I wouldn't be HEALTHY, and I want to feel good above all else. Also, I want to feel better in my clothes, so that means I need to exercise (eek) and tone up as well as lose weight.
So... my goal is to wear that dress (and be COMFORTABLE in it) by Christmas. It's a really nice dress I bought a RW&Co; over a year ago. It was reduced by 90% and they only had that size. I tried it on (when I was 10-11 pounds less than I weigh now) and it JUST fit. I figured that with the right undergarments I could pull it off, so I bought it. As I was going through my clothes recently, I found it hanging in my closet, tags still on. So I tried it on. I couldn't pull the zipper all the way up (believe me, I tried) and my stomach area looked stuffed in there. Yuk. It's technically only a size down from what I'm wearing now, but the structure of the dress doesn't allow for any extra "bulge". There is no give in the fabric, and no forgiveness in the cut. You need to be that size ALL OVER to pull it off, no "almosts" allowed ;)
So that's my new goal. And it stares at me when I wake up every morning, and watches me go to sleep every night. I've found a new conviction, and it feels GOOD!

In my first week, I lost 3 pounds. I attribute most of that to the illness that plagued me for the first half, but I guess SOME of it could've been due to better food choices! :)
I fell off the wagon HARD this weekend. I wouldn't be surprised if I maintain or even gain this week based on the weekend alone. I couldn't resist the mini muffins I baked for J (full fat, loaded with buttermilk, banana & blueberries - because unlike his mother he actually NEEDS all that calorie-laden goodness). Oh, and what did I do to NOT feel guilty about taking food out of my (picky) son's mouth? I baked more.

But then I buckled down. Made a meal plan for the week, and went shopping for good (for me) food.
I'll weigh in on Friday and (fingers crossed) won't gain anything!!!

Urp. Yay?
Okay, so apparently my body heard "I want to lose weight." and interpreted that as "Let's get violently ill! WOO!"
I won't nauseate you with all the gory details, but I was REALLY sick this past weekend.
Silver lining: 3 pounds lost!
Cloud: Can't look at food without wanting to throw up.
And NO. I'm not pregnant. Don't ask me how I know, I just know, okay.
Ugh. Worst weight loss plan EVAH.
On the schedule for tonight... Try to get better and make a meal plan without yakking.

Accountability.
Dammit. I've been SLACKING large. I've been eating crap and not caring, and it's really started to show. My pants are getting uncomfortably tight and the clothes that were really loose on me when I started back at work after maternity leave are fiiting. Perfectly.
Gah.
So, accountability time.
I've gained almost 15 pounds BACK. I said it would never happen, but it totally did.
I'm not ready to disclose how much I weigh, QUITE yet. But admitting you have a problem is the first step to recovery, right?
So...
My name is K, and I am a food-o-holic.
From now until Christmas, I will try to get back to where I was a little over a year ago. 15 pounds lighter. That means eating properly, no more late night snacking, and limiting my carbs to small portions of rice, whole grains, fruits or milk. (Carbs are my downfall. I could live off them, and they go STRAIGHT to my gut. No lie.)
No sweets. No chips. No crap until Christmas.
*SIGH* It's going to be a tough 2 months, but I've done it once, and I can do it again :)

*Blush*
Although I'm hovering at around only 3 pounds lost (ticker can't be posted in this new layout without buggering up everything. I'm searching for a more ticker-friendly format...), I received a few compliments this weekend about the way I look! Namely when my mother-in-law pulled me aside and said "Have you lost a lot more weight?" *Blush*
OH, and went jeans shopping for the first time in a LONG time and am fitting into my University waist size! WOOOOOOO! ;)
Now, I'm not letting it go to my head, and I have taken a couple of extra steps to help me achieve my goal. I've given up desserts for lent. Candy, chocolate, pastries, ice-cream etc... They are all on my "DO NOT CONSUME" list until Easter (which, conveniently is only a handful of days before my birthday!). I've also re-established the "no eating after the kid is in bed" rule (which was implemented last year at this time - with great results). And am trying to AGAIN consume the appropriate amount of water during the day (that last one starts today).
So, hopefully, with my added diligence, the pounds will start to drop once again.

Back in the saddle again...
So that's it. I've gotta get back on the wagon. The weight loss wagon, that is... When I put my mind to it last year (almost at the *same time*, last year... Hmmm... Interesting) I lost 30 pounds.
I held that weight ALL last summer. So 4 months. It was a good summer, I was very diligent on watching what I ate, I exercised a whole lot, and I felt awesome! (I gotta say, on a side note, exercising is WAY easier when A) You're at home all day, and B) It's SO nice out! Exercising during the winter is WAY harder when A) You're at a desk all day, and B) It's narsty and cold out.)
But, I've gained back 10 of that 30 :(. SO... It's time to get back. Back to caring more about how I look and feel, and caring less about how much time it takes to actually MAKE my own meals. Fast food = Bad food. (And, Sidenote #2, Fast food also = $$$$ food). I've also got to go for walks on my lunch, and stop comfort eating.
So, I've made myself a goal. I will lose 15-20 pounds by my birthday, April 17th. That gives me 2.5 months, more than enough time. I lost 30 in the same amount of time last year... I can SOOO do it. :)
Up goes the ticker... EEK!
